What is a good smoker for a decent price?

Can this smoker be operated by a candidate for the book Q'n for dummies?

The two I posted pics of here are what I'm currently using.

http://www.glockpost.com/forums/showthread.php?t=989

The Char Broiler a run ya about $170, with the side fire box as shown, I think. All a my old rigs were all getting on the burnt out end, so I bought this one on a whim. Very satisfied so far.

The lil vertical Brinkman I picked up cause it was cute. Paid around $55 for it last year. Works great for small batches a critters. I noticed in H/Depot yesterday that this years model has 2 doors instead of one. I like that better.

I can tell you that a WSM will probably run a few dollars more but they will outlast the Charbroil and Brinkman by a long shot. If your in an area prone to rust and weather changes go with the WSM.

I a go by there tommorrow an ask politely jus what da hell is goin on an why da hell JT ain't got his stuff yet an get some straight scoop.

I been in dat store a few times, they know me when they see me, always actin kinda nervous when I'm in there.

They gots some expensive stuff in there, most of it ain't worth a damn.

But, they gots a good stock a Weber stuff, so I go by there erry now an again when I wear somethin out.

Last time I was in there, they had about 100 of da WSM's come in, all already sold. They might be waitin on Weber ta get they act together, but dat don't help ya none, I know.

They closed right now, but tommorrow, I a go see what I can do ;)

I was really just joking when I made my post. I think 7-10 days is a reasonable amount of time to get a large item shipped ground.

But if I do not get it by Saturday::hereyago::ow::dita::chainsaw::subgun::sn iper:

So for just over $50, you can build a smoker.

I got my WSM assembled today. I am gonna try to Q some chickens on Saturday. This is gonna be an experience as the closest thing to Q'n that I have done is turning the knob down on my gas grill.

What do you guys use for thermometers? I have a small instant read meat thermometer but I am looking for something to measure the temperature inside the WSM.

If you can't count to 5 your fire is too hot.

Look for a probe thermometer

Polder and others make em. All run about $15-20

I been usin one a these in one form or another for 15 years

http://www.poldertest.com/thm-362-86.html

Any brand is about da same, you can get em just about anywhere, Homey Depot, Wally World, wherever a work

I bought a water heater drain pan to put between the smoker and my deck. Can I place the smoker near a deck rail or do I need to seperate it by a few feet?

I have a small deck (8X12 or so) and I know I need to keep it away from the vinyl but how close can I get to the wood without worrying about damage or starting a fire?

BigSlick

Dats a loaded question.

If ya get it too close you a burn down ya whole crib.

I keep mine on da patio-ette, ain't burned up anythang yet.

Keep about 15ft around it in ever direction, an fire it up.

Check it for yaself while it's doin it's thang.

I doesn't get dat hot on da sides, mostly da bottom. I keep a oil drain pan underneath ta keep any coals dat might fall out (none ever do) from burnin a hole in da city's patio-ette floorin which is da cheapest fake wood ever brought outta mexico.

Me personally, I wouldn't snuzzle it up against anythang, but dat just me. I a go at least a foot in ever direction wit mine for clearance, but like I say, fire it up an check for yaself.

Plus, if ya burn down ya whole crib, yank dat brisket off a lil sooner than usual cause it a prolly cook a lil faster from da outside fire.

Don't let da fireman anywhere near it, they luv brisket an you won't get none if they find it first.

Two years ago I bought a dual probe remote thermometer. It is pretty neat one probe goes into the meat and the other mounts inside the smoker. It has about two foot wired from each probe that goes to a transmitter. You can carry the reciever with you into the house or sit it on the loading bench and watch the temps. It also has a meat temp alarm, and a smoker temp alarm if the temp in the smoker gets too high or too low. Since getting the WSM the smoker temp alarm rarely if ever goes off.

I dont know if the is the same one I have, but here is a link so you can get the idea.

I use the hand method for the grill all of the time, but I dont know how I would use it for the smoker? How do you do that???

Thanks,

Chris

Next time your smoking and have your temperature set hold your hand over the exhaust or near/on the top of your smoker a few times till you learn where it needs to be. Temperature accuracy isn't that important to BBQ. Fluctuations aren't that important. BBQ temps can range from 200º to 350º without a lot of noticeable difference. Radiant heat is more of a factor and a bigger issue.

I smoked several chickens yesterday. They turned out pretty good. I smoked them for 3 to 7/2 at 225-250. This was my first time using charcoal for anything and the first time smoking meat. I think I used way too much charcoal but everything turned out OK.
