....to go on the WSM in the wee hours tomorrow. 5lbs each, two different rubs. Using pecan wood;

And here they are. Not as good as I hoped. The temperature took off on me early on and they cooked too fast and didn't get as much smoke flavour as they should have. Still turned out better than I expected. Have one whole one left. Good thing, as several friends at work have placed their lunch order for Monday!

One rub is the Low and Slow Rudimentary rub, and the other is a recipe from Matt Dunigan:
1/2 cup brown sugar
3 TBS sweet paprika
1 TBS kosher salt
2 tsp garlic powder
2 tsp onion powder
2 tsp ground cinnamon
1 tsp ground corriander
1 tsp cayenne pepper
1 tsp dry mustard
1 tsp cracked pepper

They look plenty good to me Frosty!!!! Feel free to vacuum seal up a bunch and send it south!
