I have a 16 lb turkey on the smoker right now. First time trying one of the big birds. I found something on the innernet about smoking turkeys on a WSM.
I have left the water bowl empty and placed a large drip tray on the lower rack under the bird. I am running it at about 325 right now. I figure it will take about 4 hours . Oh, using cherry wood.

Sounds great. I like smoked turkey. I tend to quarter my birds when smoking them. I'm able to start the dark meat about 15 minutes early than the white meat. That way I can get usually get them done at the same time instead of the white meat drying out waiting for the dark meat to come to temperature.

I will try that next time, although it didn't turn out too bad at all. I've had much drier bird done in an oven! Lots of leftovers for soup and sannies!

Heck, if I can make a tasty smoked Turkey on an offset charcoal grill with a water pan then turkey in a smoker ought to be awesome!~
Smoker, cherry wood, controlled temp, you will ROCK this project. I'm jealous!!!!!!!!!!!!!!!!

Great looking bird Frosty. Please give us the complete run down. Did you inject or brine? Did you have a rub? Did you run it at 325 the whole time? For how long? Etc. etc. etc!!!

Didn't have time to brine it. Just rubbed it with a bit of olive oil and then a dry rub, some under the skin too.
Cherry wood chunks and some lump on the bottom then about 1-1/2 chimneys of lit lump on top to fill the ring, with a couple more chunks of cherry thrown on. Temps were mostly around 325, but dropped to 300 for a while, then jumped to 345ish when the unlit lump took off before it settled back to 325. The instructions I used said to leave the water bowl empty and place a drip pan under the bird. I put about 2 litres of water in the bowl in case there were some stray drips got in there (makes it easier to clean) and added a couple more litres when the temps got up at 345. Took about 4.5 to 5 hours on the heat. It rested about 30 minutes before we sliced it up.
