The more I use this smoker the more I kick myself for not buying one sooner.
I've got a couple of chickens, first ever ribs, and multiple fatties under my belt so far. All very good.
Today I smoked a pair of turkey breasts, delicious, and currently have two advanced fatties stuffed with ham and cheese going as I type.
What a smoker.

Initially I planned on giving it to my brother. He grills almost daily and is interested in smoking. With that in mind it was going to be several days before he came to get it.
I'm not a paranoid kind of guy, but I don't like to toss anything into the garbage that contains any of my personal information. And I'm not cheap but I can't see paying the asking price for a good shredder. So I got an idea. Why not use my brother's smoker to burn up my huge pile of collected garbage meant for destruction? It really made sense to me. So I did it. I carried this massive box outside, took the top off the smoker and started burning and burning and burning. It got almost too hot to stand around. Then the finish on the outside caught fire and burned off. Then the wooden handles began to smoke.
My brother is now shopping around for a smoker.

WSM is the best bang for the buck around. There isn't a better all around smoker around.

Blueline, if you look in the yellow pages, you can normally find a commerical document destruction place. Right after I got home from down south, I had to have boxes of stuff destroyed, cost me $20 and no mess to worry about. Shred it right in front of you and then sold as scrap.

My 5yr old loves to shred paper, but ya gotta keep an eye on her cuz anything's game when she finds it lying around.

I assume that's the old ones, but man that's still $100 less than Amazon cuz they charge the same price for old ones and new ones. What gives? This new one that just hit is gonna have a whole lot of people trying it out, but for a newbie do ya think getting one of the old ones with zillions of hours of people perfecting them is a better idea?

WSM is set it an forget it, light it up an walk away fror 10-12 hrs or so. Brinkmann is fight da temp spike every 5 minutes all day an all night long, hopin it don't dry out or ya fire go out. Plus, da WSM don't rust, seals better and is easy as pie to run good cue with from da get go. Brinkmann a work, but ya gotta stay close an nurse it, an hope a lot.

I figure either one a work. If I was buyin now I would prolly go wit a new one. Seems like they added a couple lil conveniences that make it real nice.
I got a 22 on order, it just ain't hit yet. When it do, I'm gonna stuff it full a ham an brisket see how it do fully loaded up.

Man ain't that the truth!! I didn't know that about the WSM. That makes me like it alot now. I thought it was a polished up Brinkmann and that was it. Glad you broke it down for me! Is it because its sealed better?

I have read the bigger door is nice for adding coals, and the bigger water pan keeps ya from having to 86 the stock one and get a Brinkmann. As for the thermometer, some folks like em there and some don't, but I trust Weber in knowing what's good and what ain't.

I think it's because da bottom isn't wide open like da Brinkmann. It's da bottom of a 18" kettle, good vents ta adjust ya flow, keep da wind from messin ya up so much. Plus, it's porcelain coated instead of painted with grill paint.

Ill agree with the set it and forget on the WSM. Ive had several occasions where I got it going before I went to bed, ( I had a digital thermometer with a high and low alarm set, 250 high and 200 low if I recall, just in case)
Get it set, go to bed and it runs all night, no alarms.
Get up and have pulled pork for breakfast, mmmmmm

Tell BoltNut to buy a WSM and you could "borrow" it.
Honestly mine sits for weeks at a time, you can smoke a lot of meat at one time, get it bagged up and in the freezer and its good to go.
Im still eating on pulled pork I smoked back in November.

I struggled with several inferior smokers for years. Seems like I was playing with the coals every 1/2 hour to maintain temp. About three years ago I camped next to someonw with a WSM. She used it every day and would set it up in the morning, go about her business all day without even looking at the darn thing, and would pull the meat out around dinner time to serve it. That sold me and I bought one as soon as I got home. It is literally set it and forget it. I can set it up in the morning, not touch it, and have ribs made in the afternoon. If you use the minion(SP??) method you can smoke for extended periods. The longest smoke I ever without adding any coal was 18 hours for a boston butt.
Just get one, you will be glad you did.

You can adjust the burn rate and oxygen intake and it holds heat well.

Da coals sit on a grate instead of being stacked in a bowl. That means when da charcoal turns to ash the excess ash falls beneath the grate leaving hot coal with plenty of space room for oxygen to find it's way to da flame. I used to have a WSM on my "want" list. After I bought the darn thing I realized it should have been on my "must have" list all along.
You may want to elevate it to that level as well.
Believe me, you won't regret it.
