This is an outstanding recipe.

PECAN SURPRISE CHEESECAKE (x1)

CRUST:
2 cups graham cracker crumbs
1/2 cup granulated sugar
1/2 cup butter, melted (1 stick)
1/4 tsp cinnamon

(alternate crust): ==<this is the version I brought to your party>==
1-1/2 cup Vanilla Wafer crumbs
1/2 cup chopped pecans
1/4 cup granulated sugar
1/2 cup butter, melted (1 stick)
1/4 tsp cinnamon

FILLING:
1 frozen MRS. SMITH'S Special Recipe Southern Pecan Pie (do not thaw)(no
substitutes)
2 bricks cream cheese, softened (8 oz each)
2 large eggs
2/3 cup sour cream
1/2 cup Half & Half
1 tsp vanilla extract
1 cup confectioner’s sugar
1 Tbs all-purpose flour
8 pecan halves

Preheat oven to 325°.

Stir together cracker crumbs, granulated sugar, butter,
and cinnamon til thoroughly incorporated.
Press mixture onto bottom and 1-1/2" up the sides
of a buttered 10-inch spring form pan.

Remove exposed crust around outer edge of frozen pecan pie.
Lay upside down on cutting board so bottom crust is on top.
Cut pie in half; reserve one half of pie for other use.
Cut remaining half evenly into 8 thin slices, keeping wedges intact.

Arrange 8 pecan pie wedges in a spoke design in prepared cheesecake pan,
with narrow end towards the center of the pan.

Beat cream cheese until smooth.
Add eggs, one at a time, beating until blended after each addition.
Add sour cream, half-and-half, and vanilla; beat until blended.
Fold in confectioners sugar and flour.

Carefully pour cream cheese mixture evenly over pecan pie wedges in pan,
making sure wedges remain in place.
Arrange pecan halves evenly around edge.

Bake at 325° for 50 minutes.
Turn off oven, and let cheesecake stand in oven 1 hour.
Open oven door and let cool completely (about another hour).
Chill at least 8 hours or overnight before serving.

Makes 8 servings.

I'm going to cheat, but... I use the recipe on the bottle of Karo corn syrup. I increase the pecan amount by about half or double, depending on how the pecans are looking compared to the mix, and cook it to perhaps slightly overdone.

Holiday favorite!

Her's is slightly different from the one on the karo bottle.

We like to substitute Crown or Jack Daniels for the lemon juice! YUMMY!!! :supergrin:

Oh, and my in laws tell me that they liked the Walnut one better than the pecan pie. I made both for Thanksgiving.

Simply the best pecan pie you'll ever eat
It's simply the best pecan pie you'll ever eat. No joke, I've had people scrape the pan on this one.

1 stick BUTTER (no substitutes--do not use margarine!!!)
1 cup light karo syrup
1 cup sugar
3 large eggs, beaten
1/2 teaspoon lemon juice OR whiskey
1 teaspoon vanilla
dash of salt
1 cup chopped pecans
9 5/8 deep dish pie crusts (must be 9 5/8 or it will run over)

Brown butter in saucepan until brown (DO NOT BURN). Let cool. In separate bowl, add ingredients in order listed. Stir well. Blend in cooled browned butter. Stir well. Pour into pie shell and bake first at 425 degrees for 10 minutes and then at 325 until done.

Notes--
At 325 in my oven, which is electric, it took an hour and 15 minutes.

You may use salted or unsalted butter. If you use unsalted you can control the salt taste a little better. I've used both in the past.

I usually use whiskey rather than lemon juice and I'm pretty liberal about that teaspoon. So is my mom.

Oh yea, pecan pie is my favorite. How far South are you? I have family in Gulf Port. I love it down there. I can't deal with the snow in the Winter in West Virginia.
