I finally got some Georgia pecan wood & I'm planning on smoking some fatties & ribs on the WSM tomorrow. Do y'all leave the bark on or take it off? The wood I got is mostly branches, bout 3-5" in diameter. I've heard it both ways. Now I'd like to hear from the folks that know. Thanx.

Pecan bark can impart a slight bitterness in ya smoked meat. Don't bother me a bit tho.
To keep da peace, I always pre-burn my pecan. Drag out of da burn pile wit a shovel what I'm about ta add to da firebox and knock da charred up bark off, best I can.
3" limbs, I would'nt worry about it. 5" limbs, I'd pre-burn. YMMV.

How long ago was it cut?
Does the bark have any green mossy-looking stuff on it?

How long ago was it cut?
Does the bark have any green mossy-looking stuff on it?
Some of it was cut 8-10 years ago.
If it did have mossy green on it, it don't any more NS. I know what ya askin here. It burns off on the pre-burn.

Hope ya'll don't mind a semi hi-jack in this thread but since we is talkin' Pecan wood here goes.
I have a friend that has a couple of dead Pecan trees on his farm, just 20" plus diameter trunks left standing now about 15 ft high. I have not looked at them yet but do you think they might be worth cutting and saving for smoke wood?
Another option is cutting some wild Pecan trees which have sprouted up on the farm. If I go this route how long will it take to dry before I could use the wood?

If kept covered and off the ground they should be fine between 6-12 months.

I say without a doubt, if ya have a chance ta get some pecan from a standin dead tree, make dat ya first priority if ya can.
I got a wad a hickory like dat 2-3 yrs ago, it was da best I ever had. Seems like it jus keep gettin better an bein up off da ground, ya got no mold, rot or insects ta deal wit.

Thanks guys, looks like I'll have a stash of Pecan wood real soon! By cutting the dead trees down I'll be helping out the landowner too.

I got a bunch of Pecan from my dad's place. That is some great smoking wood for sure. I have been leaving the bark on with good results, but now Jawja has me thinking I need to try it the other way. :)
