Anyone willing to share their BBQ sauce recipes?
I've always relied on commercial or small local producers and bought it in, rather than make my own up... but I'm getting really intolerant of high fructose corn syrup - it doesn't play well with me, so I'm considering making up a LARGE batch and bottling a ton - starter recipes would be greatly appreciated from all you "Q" kings...

Two of my personal favorites.
For Pulled Pork
Bob in GA Dip
2 cups vinegar
2 tablespoons salt
1 tablespoon red pepper flakes
(black pepper also if you desire)
Mix ingredients and store forever.
Everything Else
Kurt's Jalapeno BBQ Sauce

Amount Measure Ingredient -- Preparation Method

1 tablespoon canola oil
1 large yellow onion -- finely chopped
4 large jalapenos -- finely chopped
6 cloves garlic -- minced
1 tablespoon peppercorns -- ground
1 tablespoon cumin -- ground
1 tablespoon crushed red pepper -- ground
1 1/2 tablespoons paprika
1 teaspoon oregano -- crushed
4 tablespoons ground New Mexican chile
3 tablespoons ground mustard
1 cup cider vinegar
12 ounces beer
32 ounces catsup
1/2 cup brown sugar
1/2 cup blackstrap molasses
2 tablespoons cayenne pepper sauce
Juice of 1 lime
1 1/2 tablespoons worchestersire sauce
1 1/2 tablespoons kosher salt
Saute onions, garlic, and jalapenos until soft. Add all of the dry spices and saute about 3 minutes, scraping pan bottom. Deglaze pan with the cider vinegar. Add remaining ingredients and simmer over low heat for about 2 hours.
If the sauce seems a bit too chunky, it's because you chopped the veggies too big! You can fix it at this point though by pureeing it with a hand held blender.

That sounds like a great sauce recipe PM! I like how it has 1 beer in it too. I can only imagine whoever was "working up the load" was adding a bit of this and a bit of that.. all while drinking. Then the thought "hmmm..why not" and in goes a beer. :biggrinjester:
